I know that complaining about the eight thousand million billion tons of snow makes for pretty dull reading material, but seriously, I’m over it. Everyone who’s wearing their pajamas inside out and dropping ice cubes into the toilet and performing intricate snow dances, or whatever it is you weird winter people do, PLEASESTOP.
But, let’s be honest, it’s winter and it’s going to be miserable for at least another month. Instead of letting The Surly take over your life for the foreseeable future, might I suggest cranking up your heat, cracking open a beer and eating some food that feels like summer?
These shrimp tacos with mango salsa will fool you into thinking it’s July. You’ll forget all about the heaping gray mountains of ice-sludge piled high in the streets, the haphazardly cleared sidewalks, your yet-again-snowplowed-in driveway. The brine-and-sand buildup on your windshield that you can’t wash away because your wiper fluid froze again will be a distant memory, as will wrestling your dog into his weird balloon-boots every time you take him out because you can’t walk more than two feet without encountering a metric ton of ice melt that will ruin his paws and probably poison him.
Okay, perhaps I’m alone on that last one. But, whether you’re sick of the snow or basking in the sun, shrimp tacos are a delicious, quick and easy dinner. Here’s how I make ’em…
Shrimp tacos with mango salsa (makes enough for 3 soft tacos)
For the shrimp…
About 10 shrimp, peeled, deveined and, if using frozen, thawed
3 garlic cloves, minced
2 tbsp butter
pinch cayenne pepper
3 tsp lime juice (from about half a lime)
1/2 tsp grated lime zest
For the salsa…
1 cup diced mango
1/2 cup diced tomato
1 tbsp minced onion
2 tsp lime juice
pinch salt and pepper
1/2 tbsp minced jalapeno
Sour cream (optional)
diced avocado (optional)
shredded lettuce (optional)
soft tacos (not optional)
Heat your butter in a pan over medium high heat. Add your garlic cloves and lime zest and cook until fragrant – about 1-2 minutes. Next, add your shrimp, salt, cayenne and lime juice and cook until the shrimp turn pink, about three minutes. Cover and set aside.
For the salsa: Now pay attention, because this is super complicated.
Take all your ingredients…
put them in a bowl…
toss to combine…
and that’s it.
Assemble your tacos (sour cream spread on the tortilla + shrimp + salsa + avocado + shredded lettuce) and enjoy.
